Pork striploin, also known as the pork loin or loin chop, is a long, boneless cut taken from the back of the pig. It is usually rectangular in shape and has a nice balance of lean meat and a thin layer of fat along the top. The cut can weigh between 0.9 to 2.3 kg, depending on the size of the pig and the specific portion cut.

Pork striploin is known for its tenderness and mild flavour. It has a fine-grained texture with moderate marbling that ensures the meat remains juicy and flavourful when cooked. The fat cap on top adds extra flavour and moisture, making this cut particularly delightful.

Cooking Methods: Pork striploin is versatile and can be cooked using various methods, including roasting, grilling, pan-searing, and sous-vide. It's important to avoid overcooking as it can become dry. Cooking it to an internal temperature of 145°F (63°C) followed by a resting period ensures optimal juiciness and tenderness.

Serving Suggestions: This cut is perfect for everyday meals and special occasions. It can be roasted whole, sliced into chops, or butterflied for stuffing. Serve with sauces, such as apple, mustard, or herb-infused gravies. It pairs well with vegetables, mashed potatoes, or a fresh salad.

Marinating Tips: To enhance its flavor, you can marinate pork striploin with a mixture of olive oil, garlic, herbs like rosemary and thyme, and a splash of citrus or vinegar. Marinating for a few hours or overnight can impart deeper flavours.
