Beef Cheeks @ $20.90/kg

Beef cheeks are a cut of meat taken from the facial muscles of the cow. They are relatively small, dense, and can be somewhat irregular in shape. Each cheek typically weighs between 200 to 300 grams.

Beef cheeks are known for their incredible flavour and unique texture. They contain a lot of connective tissue and collagen, which can make them tough if not cooked properly. However, when slow-cooked, this connective tissue breaks down, resulting in meat that is tender, succulent, and rich in flavour.

Cooking Methods: Due to their high collagen content, beef cheeks are ideal for slow-cooking methods such as braising, stewing, or slow-roasting. These techniques allow the collagen to break down and create a gelatinous, melt-in-your-mouth texture. Beef cheeks can also be cooked in a pressure cooker to speed up the process while still achieving a tender result.

Serving Suggestions: Beef cheeks are often served with rich, flavourful sauces and paired with hearty vegetables such as carrots, onions, and potatoes. They are popular for dishes like braised beef cheeks, beef cheek ragu, and slow-cooked beef cheek tacos.

Marinating Tips: While not always necessary, marinating beef cheeks before cooking can enhance their flavour. A marinade with red wine, garlic, herbs, and a splash of vinegar works well to infuse the meat with additional depth.
