Flank steak is a long, flat cut with distinctive muscle fibres running along its length. It typically measures about 2.5 to 4 cm thick and can be large, often weighing around 680 to 900 grams. 

Flank steak is known for its robust beefy flavour and somewhat coarse texture. It's a lean cut with little fat, making it a healthy choice. The prominent muscle fibres give it a hearty, chewy texture, but when cooked and sliced correctly, it can be tender.

Cooking Methods: Flank steak benefits from high-heat cooking methods such as grilling, broiling, or pan-searing. It's best cooked to medium-rare or medium to maintain its tenderness. Marinating the steak before cooking can help enhance its flavour and tenderness.

Serving Suggestions: After cooking, flank steak should be sliced thinly against the grain (perpendicular to the muscle fibres) to maximise tenderness. It’s ideal for dishes like fajitas, stir-fries, and salads, or simply served with a flavourful sauce.
