It is a fatty, juicy and flavourful cut of meat that can be cooked in various ways, such as roasting, poaching, pickling, confit, smoking and braising. This cut is often used to make crispy and crackling skin, by scoring the skin and seasoning with salt.
Our meats are prepacked for wholesale, and each box varies slightly in weight (est. ± 10%).
